May Meal Plan with the Kids
My poor kids are getting sick of peanut butter & jelly sandwiches or quesadillas for lunch but they are so darn picky that coming up with quick and easy lunches is tough. Last month, I incorporated 1 easy recipe into each week’s lunches so my oldest kiddo could help cook.
This week I’m challenging her to build her own lunches. While I was writing the May 2020 Meal Plan, I had M sit down with me and we looked over this list of 10 Healthy Lunch Ideas for Kids. We made a list of all the foods that sounded good to her (or that she’d be willing to try) and I’ve added them into the May 2020 Meal Plan!
I’m super excited that she’ll be trying the White Bean Dip and the Chocolate Black Bean Muffins since she’s bound and determined not to eat any meat these days. Unless it’s chicken nuggets, sausage or bacon!
We’re going to try to get all the groceries we need for the month at once because going grocery shopping is a pretty miserable experience these days. I’ll spend one day doing most of the prepping and freeze anything we won’t use right away. So the weekly meal plans will be a little more flexible than usual!
