Last week was a major learning experience. I was SO HUNGRY. I had no idea what a filler grains and legumes were for me! And I realize that I was completely dependent on nightshades, soy products, processed carbs, legumes and nuts and seeds.
I did a modest amount of planning last week to prepare, but it was not enough. I’m going to have to plan to eat so much more than I’m used to – or at least plan in some more starchy veggies to tide me over. I’ll also need to come up with some good snack ideas to have on hand because it’s not even funny how badly I want some dang chips!
This is no walk in the park
I’ll be honest, this elimination diet has not been easy or enjoyable. I’m sick to death of salads so I’m turning to smoothies to hopefully fill me with all the beneficial nutrients of raw greens without wearing out my jaw. I miss my flavorful sauces and my wide variety of seasoning blends.
On the plus side, my skin is really starting to clear up and the extra belly fat I thought was from having two kids has turned out to be bloat and is nearly gone!
I love that I am eating so healthy and that I’m feeling the improvements but I am really not loving the food yet. I’ve definitely learned that I can’t rely on my brain to come up with clever and delicious meals all on its own. Next week, I’ll be going back to picking out recipes from my favorite food bloggers and modifying as needed.
I’m not going crazy with this
Last week I was pretty strict with myself and was very careful to follow the extremely limited list of foods. However, I’m getting married this weekend (YAY!!!) and we’re going to have family coming in and there is no way I’m sticking 100% to this diet.
So I’ll stick with it as close as possible to the 2-week mark then give myself some space to enjoy my family and my food. For me, family and food go hand in hand and for my own wedding I’m not holding back!
Eating out
We’re going to be hitting many of our favorite restaurants – almost the only time we do this is when family is visiting! Dion’s Pizza, El Pinto New Mexican Restaurant, and the bar/restaurants at the Tamaya Resort will have to happen. I’ll make some modifications like ordering my pizza without cheese, adding extra calabacitas in place of beans and rice, and doing a side salad instead of rolls. But in the end, I’m going to savor every. single. bite. of whatever I order!
I’ll get back on track next week after I get some time to plan and prepare for this new eating style.

Smoothies – I’m loving a blend of coconut milk, kale and spinach, apple, avocado and ginger. It’s quick, tasty and makes me feel like I’m putting some seriously healing stuff into my body!

*Healing Veggie Soup – I used daikon, carrots, greens, broccoli and ginger simmered until tender. I didn’t really care if it tasted good since I got a head cold.
