It’s the end of the month and for the June: Week 4 Meal Plan, I’m trying out a new meat-free breakfast option, batch cooking/meal prepping and making quick and easy dinners.
When I spotted 40 Aprons’ Whole 30 Picnic – I got really excited. She’s created a delicious roundup of recipes that together create an amazing picnic spread. Ranch Club Turkey Lettuce Wraps, Roasted Sweet Potato Salad, Greek Veggie Salad, and Pink Drink Strawberry Refreshers. Yes Please!
I knew right away I really wanted the Turkey Lettuce Wraps for lunches this week. Then the other sides got me thinking – I could make those once and then use them in other meals throughout the week!
So I’ll use the Kale Caesar salad alongside the Bruschetta Chicken then I’ll use the other sides for whatever Hubs decides to make for our Grilling Night! Do you know what that means? I won’t have to do any cooking that night! What am I going to do with myself???
I’ll probably dirty up the kitchen anyway since my kids are going to help make these delicious S’mores Cookies! Two weeks ago, I talked about getting kids in the kitchen more. After the smashing success of Mermaid Popsicles and Strawberry Jam Bars, my kids have been way more interested in watching and helping me cook. They come and go as their attention spans allow, but it’s pretty exciting getting to share the process of cooking with them. Are your kids interested in what you do in the kitchen?
What are you cooking this week?
