Even though I still don’t want to cook anything crazy first thing in the morning, I will make exception for Cookie and Kate’s delicious Huevos Rancheros and some good ol’ Biscuits and Gravy. What I love about both these recipes is that they will get you through several mornings so they’re completely worth the effort. As always, I’ll blend up my own unsweetened cashew milk since I’m a no-dairy kind of gal. I also love to meal plan around these recipes so I’ll include other recipes that will use Pico de Gallo, refried beans and biscuits.
Since I’ll be putting a little more effort into breakfasts, I’m scaling back big time on dinners and opting for super quick one-pan meals that require minimal prep. I’m cutting some corners by buying a bag of coleslaw mix for the Beef and Cabbage Stir Fry and a bag of frozen veggies for the Vegetable Pot Pie Skillet. Since I’m already making biscuits for Biscuits and Gravy, I’ll make a double batch for the Vegetable Pot Pie Skillet. For the minimal prep of chopping mushrooms for the One Pot Stroganoff and crumbling tofu for the Tacos, I’ll put my 4 year old to work. She loves helping me cook!
