I’m definitely ready for spring – which almost sounds silly because New Mexico has really mild winters. But all the same, I’m wanting fresh fruits and slightly lighter fare.
While I attached recipes to most of the meals listed, I’m going to tweak them here and there to use ingredients that sound better to me. For example, I’ll probably decide what exactly is going into my smoothies and buddha bowls when I get to the store based on what’s on sale and what looks good.
If you are vegetarian or vegan, you can easily substitute tofu, seitan, or your favorite plant-based protein for the meat recipes!
