The August: Week 1 Meal Plan
Breakfast
Eggs, bacon, home fries and fruit for the rest of the fam
Mexican Breakfast Skillet – I will leave the meat out and sub in some other veggies and some pepitas. Maybe some broccoli and carrot slaw since I’ll have some leftover from the Pesto Squash Lunch!
Lunch
Pesto Squash Noodles and Spaghetti – I’ll be using a spaghetti squash and add some calabacita squash slices from our garden, omit the tomatoes (don’t want to overload on nightshades!), and add some broccoli and carrot slaw!

Sheet Pan Balsamic Basil Chicken Cauliflower Rice Bowls
Southwest Chicken Skillet – I’ll be using bell peppers, onions, and tomatoes instead of rice, and omitting the beans. If hubs or the kids want rice, I’ll make it on the side. Or I might do some sweet potato for me and regular potatoes for the fam.
Grilling Night – Hub’s choice of meat (maybe try this Triple Citrus Marinade!) , a big salad, and corn on the cob

Tostones and Guacamole
Apple Sandwiches – My kids are going to love making these!!!
