The October Week 3 Meal Plan is the fourth and final week of my one-month meal plan experiment! This week we’re getting colder weather so I’ve included lots of warming, hearty dishes.
When I first created my one month meal plan four weeks ago, I made sure to check the weather forecast so I’d know when to start adding in cold-weather dishes. Looks like that worked out perfectly!
Meal Prepping Ain’t Easy…
The only issue I’m still trying to overcome is prepping ahead of time. I often find myself hungry but too lazy to actually cook. But every time I’ve planned ahead and done a meal prepping session, I’ve been seriously grateful for all the lunches and snacks waiting for me in the fridge.
If I ever figure out the secret to meal prepping I’ll let you know. Unless you can share some suggestions? Hit me up in the comments and let me know what works for you!
My goal for the October Week 3 Meal Plan is to spend one morning or afternoon making the Cozy Autumn Wild Rice Soup, Turmeric Coconut Flour Muffins and Tart Cherry and Plum Gummies. Then they’ll be done and I can eat them all week!
It’s Green Chile Time!
Green Chile season is in full swing in New Mexico so of course it’s time for some AMAZING green chile chicken enchiladas!
While green chile is definitely not AIP-friendly, I’ve found that I can tolerate some nightshades here and there. So I’ve made sure that I can make all the other dishes AIP-compliant with a little wiggle-room.
