It’s hot y’all, so the July: Week 3 Meal Plan is full of light summer meals that will satisfy my hankering for crunchy veggies and make the best use of all the amazing fresh food overflowing from our garden!
Maybe because this head cold is still lingering but I really wanted a soup this week and this Basil Zucchini Summer Soup looked absolutely perfect! As a bonus, it’s AIP/Elimination Diet friendly and super good for the gut! Woohoo!

If you’ve followed my meal plans for a little while, you know that I like to roast a couple chickens about once a month or so to keep up my freezer stash of shredded chicken and bone broth. I’ve not been using my shredded chicken as much lately, but I’m completely out of bone broth (thanks head cold!) so it’s roasting time again! I’ll be putting some of my shredded chicken to use in this week’s Chicken Tostadas.
