January: Week 1 Meal Plan

Wow ya’ll it’s 2019! You might have noticed that I’m all about traditional cooking, so we’re starting off the year with some black eyed peas, greens and cornbread. Yum!

Here’s a fun article from The Spruce on what to eat and what to avoid for luck in the New Year. Apparently chicken and lobster are not recommended! I don’t know why but I find it so fascinating how little traditions like these get started.

Solving the Leftover Problem

I normally plan four different dinners, but I still have a ridiculous amount of Tamales, Posole and Southern Chili from last week. So this week I’m only planning three dinners that are designed to help me use up the random bits of leftovers I’ve got.

Do you have any traditional foods for New Year’s? How do you like to use up leftovers? I’m curious to hear what works for you!

Breakfast

Scrambled Tofu (smothered in Red Chile Sauce!), Sausage, Toast, and Fruit

Black Eyed Pea Cakes, Greens and Cornbread – For the greens, I’ve got some leftover spinach and baby kale I’ll sauté with a touch of coconut oil and some balsamic vinegar. No food waste here!

Leftover Fried Rice – I love this recipe because you can use virtually any leftover in it and it still tastes amazing. This time, I’ve got leftover rice, some bell peppers, zucchini, green onion and cilantro, tofu, and a couple other meats floating around in my freezer that I’m excited to use up. Don’t forget some sriracha!
