It’s FALL! That means that the October 2020 Meal Plan is PACKED with all my favorite comfort foods! Stews, roasts, pies, and all the best flavors of fall.
And yes, I love anything pumpkin spice – but I’m holding off on that until next month. This month I’m all about CHAI Spice. I’ve got a couple different recipes that use this delicious spice blend – which I make myself using this Chai Spice Recipe.
It’s also green chile season here in New Mexico so you can bet that we’re making Green Chile Chicken Enchiladas and working green chile into pretty much anything we’re eating (like breakfast burritos and mashed potatoes!).
I’ll also be making Beef Wellington for the first time EVER – yikes! Hubs has been talking about it all September and finally talked me into giving it a try.
