The meal plan for May: Week 5 is mostly a repeat of last week’s meals. I spent most of last week down for the count with a stomach bug. Lovely right? If you keep reading, I’m sharing what I ended up eating in my spotlight on What to Eat When You’re Sick.

I still have most of what I need to make all of last week’s delicious meals that I was so stoked for last week – so they’re happening!

Food Spotlight: What to eat when you’re sick
To be totally honest, I’m pretty sure my stomach bug was food poisoning. More accurately: my stomach rebelled because I chowed down on a plain ol’ burger and fries. Yeah, totally NOT AIP. It was a face-palm moment – Don’t judge me! Lesson learned.
In light of that experience, here is a list of what I ended up eating last week that helped me feel better.
- Bone Broth – I sipped on this stuff like crazy since it has all the good nutrients to support the healing body and gut. Luckily, I had a ton stashed from making a huge batch a couple weeks ago, but in a pinch, you could grab some Kettle and Fire Bone Broth – theirs is the closest you’ll get to the quality of homemade!
- Healing Veggie Soup – I simmered carrots, celery and any other veggies that sounded good in bone broth until they were super soft and ultra-easy to digest. This isn’t going to win any awards for taste but it’s bland, easy on the stomach and will give you what you need to heal and work back to solid foods. Also try Cookie and Kate’s Chickpea Noodle Soup for a vegetarian version!
- Applesauce – Ever hear of the BRAT diet? The when-you’re-sick diet: Bananas, Rice, Applesauce and Toast. For someone whose body is not loving rice and toast, that leaves bananas and applesauce. As luck would have it, my stomach was ONLY cool with applesauce, but I’ll take it.
- Water w/ a squeeze of lemon – I kept getting a stomach ache after eating, no matter what I ate, so my guess was that I was having a hard time digesting what I ate. The Paleo Mom has some awesome info on aiding digestion (scroll down to Work on Stomach Acid), and what helped me was simply drinking water with a squeeze of lemon right before eating. Also check out Unbound Wellness’s Apple Cider Vinegar Shots to aid digestion!

Carrot Bacon Breakfast Fritters
Breakfast Hash w/ Ground Chicken, Kale, Sweet Potato, and Apple
Eggs, Bacon, Waffles and Fruit for the rest of the fam

Panera Fuji Apple Salad w/Chicken

Sandwiches
Beans and Toast w/Fruit – for the kids
Dinner
Healthy Jambalaya w/ Sausage and Shrimp
Bang Bang Shrimp w/ Asian Chopped Salad
Sheetpan BBQ Meatloaf w/ Roasted Asparagus and Potatoes – while BBQ sauce is not AIP-friendly (yay nightshades!) you can get a tomato-free BBQ sauce like this to use!
Memorial Day Grilling Night w/ Cucumber Salad, Corn and Baked Beans – Hubs gets to choose the meat and I’ll handle the sides!

Plantain Chips w/ Pineapple Guacamole
Goldfish and Cherries for the kids
