I’m continuing my practice of meal prepping for the May Week 4 Meal Plan – especially for breakfasts. I plan to spend a little time one morning making the breakfast fritters and burgers so I can just reheat and eat the rest of the week. I might even go so far as to pre-package the smoothie ingredients but we’ll see!
My sweet tooth is getting some serious attention this week with the Banana Cream Parfaits and Chocolate Chip Cookies. I would try to say that I’m just testing out the cookie recipe to see if I can turn that into a Chocolate Chip Cookie Cake like this for my kiddo’s birthday – which is true! But I also just want some cookies!
Ingredient Spotlight: Gelatin
Since I’m not eating eggs (last time I tried I ended up with a hive-like breakout down my neck – yuck!), Gelatin has become a new pantry staple for me. It acts as a binder, just like eggs, when making meatloaf, burgers, or those yummy Carrot Bacon Breakfast Fritters. And of course, when you have gelatin around, you can make your own Jello and Puddings!
Gelatin is also a great ingredient to help support gut health. It contains many of the crucial building blocks cells need to stay healthy, and helps repair damaged cells, including the cells that line your gut. Since the health of your immune system is directly linked to the health of your gut, adding gelatin to your diet is definitely something to consider.
