The July: Week 2 Meal Plan is full of light meals that are quick to prep and perfect to savor on these hot summer days.
I love those hot summer evenings when a light breeze starts to bring some freshness to the air. The sun begins to fade and the patio lights come on. Everything slows down and we can kick back and enjoy the evening, each other’s company, and some delicious food. Nothing better!
All I want to eat is fresh, light food. And I’m still sticking with dishes that are quick to prep and relatively hands-off. Cause it’s summer and I’d rather be playing with the kids in the pool am I right?

Breakfasts to Fuel My Workouts
I’m really careful to pick breakfasts that will give me loads of balanced energy. A good breakfast will make or break anyone’s day, but especially if you do your workouts in the morning. I’m also a big believer in relying on whole, real food to fuel and nourish my body instead of all the various workout “shakes” out there.
While I was going through my Elimination Diet phase, Breakfast Hashes like Michele’s Turkey and Sweet Potato Breakfast Hash were the only breakfasts that would keep me going until lunch.
I recently discovered that Chia Puddings are the perfect breakfast to fuel my longer runs (and other workouts too!). Read more about why chia seeds are amazing in my Ingredient Spotlight here.
This is why you’ll see some variation of a breakfast hash and a chia-based breakfast listed every single week.

Coconut Chia Parfaits – Using Cookie and Kate’s Chia Pudding recipe, mixing up the toppings with shaved coconut and whatever fruits are on sale!

Leftovers – I’m so excited about all the dinners I’ve planned, I’m not going to plan a lunch recipe. I’m just going to devour any and all leftovers!

Grilled Greek Chicken w/ Fattoush Salad and Pearled Couscous – I’m using the marinade from this Vegan Greek Gyros recipe from Veggies Don’t Bite because it’s the best Greek marinade ever!
One Pan Chicken Pesto w/ Vegetables
Crock Pot Pork Chops w/ Steamed Green Beans and Brown Rice
Baked Shrimp Scampi w/ 50-50 Zoodles and Pasta
Snacks
Chips and Guacamole
Fruit Popsicles
