It’s summer so the July: Week 1 Meal Plan is full of quick, easy, and delicious sheet pan, slow cooker, and skillet meals to keep me out of the kitchen as much as possible!
I’m in this season right now where I’m struggling to make anything more involved than dumping a few ingredients into a pan and cooking them. So instead of trying to come up with fancy plans for meal prepping, I’m just going to embrace the simplicity of skillet, sheet pan and crockpot meals.

Breakfast
Chia Pudding w/ Berries – From Cookie and Kate
Turkey, Kale, Apple, and Sweet Potato Breakfast Hash – with Eggs for Hubs

Bacon Ranch Pasta Salad – From Amy Myers, MD – This recipe uses Hearts of Palm Noodles in place of regular pasta. Sadly my trusty Thrive Market doesn’t have Hearts of Palm Noodles, but my local grocery store carries them and you can order them on Amazon too.
