This week I’m getting a little more adventurous in my kitchen. I really try to avoid the processed, high-sodium canned foods, but my oldest kiddo has been begging for Beanie Weanies. So I’m attempting to do a mostly homemade version, except for the store-bought vegan hot dogs part.
I really love flavorful artisan sandwiches but almost never feel like putting in the prep efforts to make my own. Every once in a while, though, I find a recipe that makes my mouth water enough to justify the work. This week, that recipe is the Tofu Banh Mi. Plus it will be a great way to use up the leftover shredded carrots from my Bell Pepper Slaw.
Game of Thrones Inspired Food
A few years back, I regularly cooked Game of Thrones-inspired food because I have a slight obsession with the book series. When the HBO show started airing, I went all-out and threw a marathon watch party where I spent the whole day cooking a feast for my guests. This was before I had kids of course! This week, I decided it is past time for me to start revisiting some of my favorite GoT recipes, so Game Hens with Giblets Gravy is happening. Bonus, I’ll get to collect more bones for another batch of homemade bone broth. Green Chile Chicken Alfredo (Dairy-free) and Salad – I’m using this Vegan Bechamel Sauce as a base then pureeing it with some Green Chile. Then I’ll pour it all over some pasta and use some of my herbed chicken stash from when I roasted chickens a couple weeks ago. Nice and easy!
Game Hens w/ Roasted Veggies and Giblet Gravy
Baked Beans w/ Vegan Hot Dogs, Steamed Veggies and Focaccia – The focaccia recipe is a variation of the Peasant Bread I’ve made before – scroll down to the bottom of the recipe for how to make it!
Salsa Fresca Baked Chicken w/Black Beans and Rice – For the chicken, I used the cooking method in the link then topped it with my leftover Pico de Gallo. I’ve included an alternative recipe with the picture below. You could easily make this vegan by using some tofu or other meat substitute! For the beans and rice, I just cooked them with some finely diced onion and bell pepper and added some fajita seasoning.
Snacks
Bone Broth – I’m going to keep it simple and buy ready-made broth from the store. I’ve heard really good things about the Kettle and Fire Bone Broth and they just started carrying it at my local Sprouts so I’ll give it a try and let ya’ll know!
